Recent Adventures in Cooking!

Recent Adventures in Cooking!

So recently I've been trying to eat a little healthier. I was introduced to a place called My Fit Foods by a coworker and I'm hooked! This has nothing to do with me cooking, in fact someone else cooks for you. MFF is a healthier food store that prepares fresh meals daily, most are a healthier option, all come in 3 sizes and are portioned to be under a certain calorie content. They are perfect for lunch at work. Instead of buying the same sandwich, or chicken tenders from the Deli everyday I've been going once a week and buying my lunches for the whole week. It's actually helped me spend less money at work because I'm not buying random extra stuff with my meals and the food is all really good. Today I had chicken enchiladas, I've had salmon and rice, beef and broccoli, Hawaiian chicken, and a few others.

At home I've cooked a few new things recently. On my last trip to the grocery store I bought kale. It's crazy popular at work so I decided to see what the fuss is about. I've used it in a smoothie, which included kale, apples, strawberries, and yogurt. Smoothie came out pretty well, although the kale left a slightly weird texture. I also tried kale chips! You toss the kale is sea salt and a little bit of olive oil and bake it in the oven until crispy. It's weird because it looks like you're eating leaves but they tasted pretty good.
The picture in the top left is the kale chips and the rest are from my pork tenderloin street tacos! For the tacos I bought a pork tenderloin, cooked it with some taco seasoning and bbq sauce and then put it in tortillas with cheese and lettuce. Yummm!
