Extreme Baking

Maple Bacon Chocolate Chip Cookies


Say what? That's right today I'm trying my hand at maple bacon chocolate chip cookies. I got the idea from a friend who mentioned adding bacon to cookies once and me being a lover of bacon decided to give it a try! I did some googling to see how others had made these tasty treats before and found a recipe that looked easy. Upon reading the reviews and tasting as I made the dough I made a few changes.

Here is the recipe I used:

Ingredients

  • 2 cups all-purpose flour changed to 2 1/2 cups
  • 1 teaspoon baking powder changed to 1 1/2 tsp
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, room temperature
  • 3/4 cup packed brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract Didn't use because I didn't have any
  • 1 teaspoon maple extract Used real maple syrup instead. 1 tablespoon.
  • 1/3 cup chopped cooked bacon 7 pieces
  • 1 cup bittersweet chocolate chips

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
  2. Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonfuls onto prepared cookie sheets.
  3. Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

All in all they came out pretty good. If I make them again I'd add more bacon, more chocolate and more syrup. It looked like a lot in the mixer but in reality not all the cookies were packed out the way I would have liked them to be. Also, the maple flavor only comes through a little, so definitely more of that.
